Crock Pot Salsa Chili

Here’s the nice thing about chili; it’s really hard to mess up and you can put just about anything in it.  This is a great recipe to make in the crock pot.  Prepare everything in the morning (or the night before) and have a hot meal ready to go by dinner time.

Ingredients:

2 lbs lean ground beef
1 large onion, chopped
1 large carrot, chopped
2 stalks of celery, chopped
1 stalk of green onion, chopped
1 (16 ounce) jar mild salsa
2 (15 ounce) can chili beans
2 (28 ounce) can crushed tomatoes
1/4 cup of chili powder
1/2 teaspoon white sugar
2 teaspoons ground cumin
1/2 teaspoon dried thyme

Directions:

In a large skillet cook ground beef.  Drain off fat and liquids.

Chop up all the vegetables and combine everything in the crockpot. 

Cook on low for around 8 hours.
